Slow Cooker Chicken Tacos

Fighting the clock to get a home-cooked meal to the table on a busy week night is always a battle for me. Between school pick up, sports practices, gym time, my husband getting home from work and off to school, band practices and photo shoots, time to prep and cook supper is almost always limited. Having one child who is still only 4, I don't know how the rest of you moms do it! If you seem to be racing the clock in the evenings as well, fight the urge to hit up the drive-thru and instead try these super easy Slow Cooker Chicken Tacos! Not only are they quick and easy, they are low calorie, filling, and delicious! My husband loves them so much he actually suggested I post the recipe on here, so here they are:

Ingredients:
-3lb Boneless Skinless Chicken Breasts (frozen or thawed will work)
-8oz Jar Salsa
-12oz Jar Taco Sauce
-7oz can Chopped Green Chiles
-1 Dry Taco Seasoning Packet
-Tortillas (whole grain, of course!)
-desired toppings 

Directions:
Dump all the the ingredients in the slow cooker and cook for 8 hours on low. When done cooking, shred chicken with a fork. It will pretty much just fall apart. Continue cooking on low, allowing the chicken to soak up some more flavor, while you prepare your toppings and set the table. For me this means opening a bag of shredded lettuce and throwing some tomatoes, onion, cilantro and salsa seasoning in my Ninja, and setting out a bag of shredded reduced fat cheddar cheese. 
 5 minutes later, dinner is served.
What's even better? This plate of food is less than 500 calories!
(Sarah drinks frozen coffee with more calories than that...)
